한류성 어족인 대구 요리가 이탈리아에서 유명하다고?

바깔라 라는 음식에 대해서는 오늘 처음 접하게 되었습니다.

얘기를 주욱 듣고 보니

이 음식 이야기속에는 

지리적이며, 종교적 내용을 포함하고 있음을 알게 되었습니다.

일단,

이 대구라는 생선은 한류성 어족이라

이탈리아 인근에서는 볼 수 없는 생선입니다.

그런데 어떻게 이탈리아 서민 음식으로 각광받게 된 것일까요?

이 요리는 고급 요리는 아니었던 것 같습니다.

안동에서 간 고등어를 먹을 수 밖에 없었던 것처럼

내륙 지방까지 생선이 이동하려면

염장이나 바람에 말려야 했겠지요.

가난하면 바다 생선을 접할 수도 없었겠지만

경제력이 어느 정도 받쳐주는 내륙 사람들이

접할 수 있었던 유일한 방법이 

'바깔라'요리였을 듯 합니다.

그럼 이 요리가 왜 종교적이냐?

카톨릭 신앙심이 높은 이탈리아 사람들이 육고기를 절제해야 하는 시기가 있는데 

그건 바로 '사순' 시기입니다.

사순에 포함되어 있는 금요일에는 육고기를 절제해야하는데

이때 대용으로 사용되는 것이 바로

'바깔라'라고 하네요.

냉장 기술이 발달하지 않았던 시기에

스칸디나비아 해안가에 흔한 대구와 이탈리아의 수출품이 교환이 되어

(대표적 교역품은 포도주 이지 않았을까요? - 이건 짐작)

해로와 육로를 이용해서

이탈리아까지 이동하고

이 염장 대구는

내륙의 가난 사람들과

사순의 금요일에 사람들이 애용하는 음식이 되었다는 얘기입니다.
